OVERVIEW

Our half day cookery courses are ideal for afternoons and evenings and we really try to pack as many new skills in as possible.

During your cookery lesson you will develop your knife skills and learn a new main and dessert dish.

Using the great seasonal and local produce on offer you will be producing some mouth watering dishes and learning plenty of tips and techniques along the way.

FOUNDATION LEVEL

No previous experience required.


TYPICAL RECIPES

  • Caramelised red onion soup with chunky Parmesan croutons
  • Orange & chocolate mousse with chocolate decorations
  • Fresh foccacia bread
  • Chocolate fondants with caramel sauce and chantilly cream


TYPICAL SKILLS YOU WILL LEARN

  • Knife skills including sharpening and different cuts of vegetables
  • Vegetable stock
  • Introduction to seasoning with salt, pepper and sugar
  • Making mousse
  • Basic chocolate work
  • Making fresh pasta dough and rolling
  • An introduction to sugar work by making caramel sauce

INTERMEDIATE LEVEL

Some basic knowledge of cooking required and you are able to follow basic recipes.


TYPICAL RECIPES

  • Baked trout fillets with a chestnut and lemon crumb served with a herb infused oil and watercress salad
  • Fresh tagliatelle with wild mushrooms, chilli and parsley
  • Chicken roulade stuffed with basil and mozzarella wrapped in parma ham, served with potato fondants and glazed vegetables
  • Lemon tart served with mascarpone cream


TYPICAL SKILLS YOU WILL LEARN

  • Filleting flat and round fish
  • Portion a whole chicken
  • Making fresh pasta, rolling and cutting
  • Basic sauces and emulsions

ADVANCED LEVEL

For a confident home cook with good knife skills and whom often follows complex recipes.


TYPICAL RECIPES

  • Pan fried breast of partridge served with balsamic shallots, glazed carrots and game chips with a rich game jus
  • Butternut squash, shallot and amaretti ravioli served with a sage and amaretto butter
  • Wild mushroom risotto with a parmesan foam and glazed walnuts
  • Chocolate frozen air served with a raspberry liquor ravioli


TYPICAL SKILLS YOU WILL LEARN

  • Filleting of game
  • Molecular techniques such as foams, emulsions and spherification
  • Filled fresh pasta
  • Complex sauces and restaurant presentation techniques
